What's for dinner tonight?

I had one of those zucchinis.... you know the ones.  The ones that would make an elephant blush?  One of my neighbors had excess and had left a pile of them at the mailboxes. 

I decided to make zucchini parmigiana with it.  Once you have everything prepared it takes no time to throw it together, but the whole slicing, drying, dredging, frying of the veggie first... its a pain in the patootie!

It's in the oven now, hopefully it tastes as good as it looked.

Mmm, zucchini parmigiana. That used to be a traditional summer activity in my neighbourhood when I was growing up--finding someone to offload your zucchinis :)

Finally got to have some and it turned out pretty good. I think I'll do it again in the future. Om nom nom nom.

I'd actually planned on only using half and making bread out of the rest, but it took the entire thing to make the dish.
